FROM THE SULMAN GARDEN TO THE TABLE: TABOULI

Students from the Sulman Program reaped the benefits of their green thumbs recently. They harvested fresh parsley, mint, shallots and tomatoes to make delicious tabouli.

Staff and students thought:

“It was fresh and yummy.”

“I enjoyed helping with the preparation.”

“The tabouli was very refreshing.”

“I am going to try and make it at home.”

 

   

   

 

TABOULI

INGREDIENTS:

2 bunches of flat parsley                          2 Lemons

¼ cup chopped fresh mint                       ¼ cup of fine cracked wheat

Salt and pepper                                          ¼ cup Oil

1 kilo of ripe tomatoes                             ½ cup of chopped shallots

METHOD

  1. Chop parsley (very fine)
  2. Cut tomatoes into very small pieces (about 1cm square pieces)
  3. Chop shallots into small fine pieces
  4. Chop mint very fine
  5. Juice 2 lemons
  6. Add remainder of ingredients and mix
