Students from the Sulman Program reaped the benefits of their green thumbs recently. They harvested fresh parsley, mint, shallots and tomatoes to make delicious tabouli.
Staff and students thought:
“It was fresh and yummy.”
“I enjoyed helping with the preparation.”

TABOULI
INGREDIENTS:
2 bunches of flat parsley 2 Lemons
¼ cup chopped fresh mint ¼ cup of fine cracked wheat
Salt and pepper ¼ cup Oil
1 kilo of ripe tomatoes ½ cup of chopped shallots
METHOD
- Chop parsley (very fine)
- Cut tomatoes into very small pieces (about 1cm square pieces)
- Chop shallots into small fine pieces
- Chop mint very fine
- Juice 2 lemons
- Add remainder of ingredients and mix
